1/2 cup butter (room temperature)
½ cup granulated sugar
1 egg (room temperature)
1 ¼ cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup buttermilk
1/4 cup lemon juice
2 teaspoon lemon zest
1 teaspoon vanilla extract
01. Step One – Preheat Oven and Mix Ingredients
In mixing bowl, sift together flour, baking powder, baking soda, and salt.
In the bowl of a mixer, cream together butter & sugar for 2-3 min. until fluffy. Add in egg and mix until incorporated. Add in lemon juice, zest, and vanilla. Next, add in half of the flour mixture and mix until incorporated. Then add in buttermilk. Finally, add remaining flour mixture and mix.
02. Step Two – Bake 10–12 Minutes
Bake for 10-12 minutes until slightly golden brown around the edges. Set on a cooling rack to cool.
03. Step Three – Mix Raspberry Filling
Add powdered sugar 1 cup at a time.
04. Step Four – Scoop Filling Into Piping Bag
Turn the whoopie pie tops over and pipe the filling.
05. Step Five – Add Red Vines Easter Twists
06. Step Six – Add Top Whoopie Pie
